A vapor tight enclosure is the key to controlling humidity. A typical walk-in cooler with good door seals is an example of a vapor tight enclosure. Walk-in cooler panels go together quickly, form a sturdy structure, provide the sanitary environment desired and provide the vapor tight enclosure to control vapor content within. And although we often use walk-in cooler panels to site build larger boxes, the 3” thick walls are not necessary for drying cannabis or curing sausage as the desired conditions are very similar in the range of 68°F and 60% Relative Humidity, and are generally in an interior conditioned environment anyway. Technically speaking, if the ambient temperature surrounding a sausage or cannabis box is close to the interior temperature, as often the case, a plywood box or plastic container that is made vapor tight could be used if it met the sanitary standards required.
Our small boxes are made of metal covered 1-1/2” thick high-density foam so they can be used in environments where the ambient temperatures are not always 70°F.
Meat ageing, however, is in the 38°F and 82% Relative Humidity range. At 38°F interior, sufficient wall thickness is required to prevent sweating on the exterior surfaces. A 1-1/2” minimum wall thickness up to a typical 3” thick walk-in cooler panel is required. Existing walk-in coolers can be converted to ageing boxes by installing additional refrigeration components, auxiliary airflow, auxiliary heat, and our proprietary PLC controller. Any site-built project requires refrigeration piping. We have included some pictures of piping to give you an idea of the level of quality we provide.
In an effort to keep a hands-on approach to our customers, we limit our service area to Missouri only and slightly beyond. Each project is considered individually to assure customers get a solid return on investment.
